1 Onion (sliced)
1 kg Carrot (chopped)
2 Pints veg Stock (using 2 veg oxo cubes)
1 tsp ground coriander
freshly ground salt and pepper

- Use frylight in pan and sweat onions and carrots for 3-4 mins to soften.
- Stir in the ground coriander and salt and pepper, cook for 1 minute.
- Add the vegetable stock and bring to the boil. Simmer until vegetables are soft.
- Blend the soup until smooth.
